Simple, filling, and easy to make for a crowd. Hamburger and beans make this tasty soup hearty and low cost.
The first time I tried this soup was at a family party and my Aunt made it. My family is not small and they are not light eaters either but this soup fits the party bill just great. Everyone loved it and when I found out how easy it was to make, I had most the ingredients in my pantry already, it became a regular on the menu. In the winter months it feeds my family at least once a month, and in the summer when it’s hot out it still gets requested a few times just because it tastes so good.
Hamburger 1 lb, browned and drained.
Taco seasoning, 1 pkt or the equivalent. Homemade works great because you get exactly the flavors you like.
Small onion, diced as finely as you like.
Corn, one can
Kidney beans, 1 can. You can substitute different kinds of beans if you would like.
Black olives, 1 can sliced
Green chilies, 1 can, diced and drained
Spicy V8, 3/4 to a full 64oz bottle depending on how thick you would like your final soup to be.
Garnish with shredded cheese, Doritos, avocadoes, cilantro, and sour cream. The sour cream moderates the spiciness, the kids and I like a few table spoons in each of our bowels but my husband doesn’t use any.
Taco soup couldn’t be simpler to make. Start by browning your ground beef and draining off the excess fat. Mix in your seasoning packet and your onion, sauté until onion becomes translucent. Then add everything else but the garnishes, bring to a boil then lower to a simmer for 10 minutes just to let the flavors combine. Serve, letting everyone garnish how they wish.
Tips
For a thicker soup only use 3/4 of your spicy V8, drain all the liquid from the corn, beans, and olives.
Leave a little crunch in your onions for a great texture and sharper flavor in the soup
The sour cream will cool down anyone’s bowl that doesn’t like spice and all you’ll get is the flavors without any burn at all so don’t be scared of that spicy V8
This recipe is very easy to double so it’s great to bring to a potluck or to make for a party

- 1 lb Hamburger
- 1 pkt Taco seasoning
- 1 sm Onion
- 1 can Corn
- ! can Kidney beans
- 1 can Black olives
- 1 can Diced green chilis
- 3/4 64 oz bottle Spicy V8 juice
- Garnish - Cheese, Doritos, avocadoes, sour cream, and cilantro
Instructions
- Brown your hamburger and drain off excess fat, add taco seasoning and onion then cook about 2 minutes. Add corn, beans, olives, and chilies (drain for a thicker soup). Add in your Spicy V8, mix well. Simmer stirring occasionally about 10 min for flavors to meld. Serve with cheese, deertoes, avocados, sour cream, and cilantro on top.
