These salmon patties are a great last minute meal. As long as you have a few pantry staples these can get dinner on the table fast. When you forget to pull meat out of the freezer, or the day just gets away from you, a home made meal is still on the menu. I like to make these at the end of the week when I have lots of leftovers in the fridge that can be side dishes.
Ingredients
2 15oz cans Salmon
3 eggs
4tbs cornmeal, or flour
4tbs bread crumbs
1 small onion, minced
1tsp each of onion and garlic powders
add salt and pepper to taste
Mix all your ingredients together in a large bowl until thoroughly combined. In your cast iron skillet on medium low melt your oil. You can use any oil that you like for frying and it will work just fine, but I like to use half coconut oil and half butter. Shape your patties as the oil and skillet heat. Once your oil heats gently lay your patties in the pan away from you so no oil accidently splashes up at you.
Cook patties until browned on the first side then carefully flip them over and brown the other side. We only flip these one time. Depending on the size of the cast iron skillet you are using and the size you shaped your patties you will have to so a few batches. I like to place the finished patties on a paper towel covered plate in the microwave to keep warm as I move through the batches. Once all the patties are cooked your ready to eat. Make sure and remember the tarter sauce on the side.
Tips
- If you like your patties crispy make sure and do a thinner and wider patty when you are shaping them
- If you are a onion person you can dice our onion instead of mincing it to get that more pronounced bite
- Adding a splash of lemon juice to the bowl when your mixing your ingredients adds great flavor

- 4 tbs Corn meal
- 4 tbs Bread crumbs

- Mix all ingredients in a large bowl until well combined. Heat up the oil of your choosing, I like to mix coconut oil and butter, in your cast iron skillet as you form the salmon mixture into patties. It will make about 11 3.5inch round patties. When the oil is heated place your patties in the pan and cook on each side until browned only turn them once. I like to place the finished ones on a plate in the microwave to keep warm until they are all finished.
